Welcome to the new and improved “Food, Sweat and Inspiration”!

Obviously, not only does it have a new design and web home (no more katiehigg.wordpress.com!), but I changed the name.

I started my blog in 2011 after I quit the photography business.  I was never in love with my blog name, but I didn’t end up blogging that much so it didn’t really bother me.  Until now.  In 2013 I started blogging a lot more frequently and the blog name/design were really starting to irk me.

So, last week, I took the plunge…

I know what you’re thinking.  What the heck is a freckled latte?  Well, I won’t bore you with my brainstorming thought stream, but basically, I have freckles and I like lattes so I put them together and wham!  Freckled Latte was born!  I was hesitant at first, asking friends/family what they thought, testing the waters, but the more I thought about it, the more it grew on me and now I absolutely LOVE it!

As far as the content, I have all the old posts & photos on here and I will be posting the same type of randomness.  😉

The old blog will stay up for now, but all new posts will be over here, so you’ll need to subscribe/follow/like this page or you won’t see any of my new content!

Re-blogging this for my almost (10 days to be exact!) teenager. I want boys to look at you with respect and adoration. You don’t have to pose seductively or suggestively for boys to like you. They will like you just as you are….a fun, goofy, book loving, kind hearted, smart and beautiful girl!  And if they don’t.  Well, they aren’t worth your time anyway.  Love you!

I cook…sometimes

My husband goes through health food phases trying to find out what his body does best with. For awhile he just ate healthy and exercised. Before that, he did the Atkins diet. A few years ago he focused on low sodium to get his blood pressure down…it worked great! He still watches his sodium, but not to the extent that he did when he was focusing on it hard core. After that, he did vegan which transformed into flexitarian without dairy. Now, he’s trying no gluten. Gluten can be linked to a myriad of health issues. I’ve told him for a year or so that he should try to cut out gluten. Well, he finally did it and like every new dietary phase he goes through, he starts to hate it after a few days because he feels super constricted and like he has a very small menu to eat from each day. I’ve been trying to find gluten-free products that he could munch on and we always look up gluten free options at restaurants.

Well, he’s in the hate it phase right now and he’s tired of eating out so last night he says to me,

“Do you think you could cook dinner tomorrow night?”

“Sure”, I said.

I was thinking today and thought, “What the heck? Hello crazy man, I made dinner last night!”

I mean, I got our food from the grocery store and we ate at home. End of story. I cooked!

Nevermind the fact that it was crab legs from the meat department and I had them season and steam them for me.

Details schme-tails, people! I still had to do dishes afterwards and that’s the WORST part of cooking dinner, so in my mind…I cooked!

It’s one of those times where I want to blog, but don’t have much to say.  Or rather, think what I have to say is stupid or boring.  But, I’m really trying to blog more so I was wracking my brain to come up with a quick, somewhat interesting post that isn’t about fitness.  I swear that’s not all I think about.

Imagine Dragons ::

Their first song, “It’s Time”, took a few listens to grow on me, but I’ve been listening to the whole album lately and it pretty much rocks.  “Every Night”, “Hear Me” and “Bleeding Out” are in a three way tie for my favorite song on the album.

This album took me a few listens before I liked listening to it all the way through, but now I dig it.  “Beautiful Goodbye” is probably my favorite from the album.

Macklemore & Ryan Lewis ::

I just downloaded this one a few days ago, but I like what I’ve heard.  He got my attention with “Thrift Shop” and then I downloaded “Same Love” as the Starbucks pick of the week and I was hooked.  I haven’t listened to it all the way through yet, but my favorite (so far) is “Can’t Hold Us”.

Dusting off the old bloggity blog…

*Warning* Rambling post ahead

Sorry, but I want to get that 1st-post-after-months-of-not-posting post out of the way.  It’s kind of like ripping off a bandaid.  Better to do it quick now, than to wait to do it later.

I’m going to just pretend my last post wasn’t in freaking AUGUST!  Holy moly.  I’m a terrible blogger.

I can’t believe it’s about to be 2013!  I swear it was just Thanksgiving.  For the first time ever, I actually had all my shopping done a week before Christmas and even though the sickies ran rampant in our household (see paragraph below), I managed to get all my wrapping done before Christmas Eve!

After months of being sick free, I got slammed with back to back sickie germs right at Christmas.  First, a bout with Strep throat.  Now, me and Strep aren’t strangers, but holy heck, apparently it gets worse on your body the older you get.  24hrs of antibiotics when you’re 12 means you are back to normal, 24hrs of antibiotics as an adult just means your fever isn’t 103 anymore, your body aches go away and your throat hurts a tad less than it did the day before.  After 4 days of antibiotics, I finally felt completely better.  And then, by bedtime on day 5 (Christmas Eve!), I was completely stuffed up with a scratchy throat!  A girl can’t catch a break apparently.  However, I’ve been pumping myself full of Zinc, Vit. C and D, a nasal decongestant and getting my rest.  So far, I haven’t felt terrible and I even feel like I’m getting better.  Crossing my fingers that the worst is over.

My poor girlie got Strep back to back recently so I’ll just be thankful that I only got a cold the second time around.

Thinking about going Vegan?

Nope, I’m not a vegan and although I’ve thought about going the vegetarian route, I’m not planning on going vegan right now.  However, at the end of this month, my husband will have been mostly Vegan (he hates being labeled “vegan”, but it’s easier for people to understand since it’s a more widely used term) for 5 months.  He started out by reading a book based on the documentary, Forks Over Knives.  For him, going plant based, was more about his health than saving animals.  He has a long history of heart disease in his family and he’s had high blood pressure for years and years, even though he’s only 33 yrs old, very active and normal weight.  Since he’s the type of guy that is all or nothing, within a day or two of doing some research, he was completely plant based.  You’ll notice at the beginning that I said, “mostly” vegan.  For 3 months, he was completely plant based.  No meat, no dairy, no eggs, nada!  However, he had lost about 10-15lbs and he was finding it hard to get his calories at times.  This isn’t to say it can’t be done.  It’s just that not only is he an all or nothing guy, he also doesn’t really want to plan what he’s going to eat, until he’s hungry.  After about 3 months, he decided that he would incorporate a little bit of meat such as fish, shrimp and lean turkey.  He only has one of these about once a week though, sometimes less.

For anyone wondering about my hubs’ health…he says he feels great, has plenty of energy and doesn’t miss meat at all.  As of his last doctor appt, his blood pressure was well within normal range.  He’d like to put on a little muscle, but otherwise, he’s at his ideal size.

*Btw, I’m tired of saying, “long time, no see” or “it’s been awhile” or reasons why I haven’t posted in a month.  Truth be told, I just get distracted or I feel  like I don’t have much to say.  🙂

Vegas…Part Deux

Yeah, yeah, I know…story of my life.  This post is a REALLY late part 2 to the previous post.  I’m a sucky blogger…What can I say?  I hope to do better.  Maybe I should blog for a solid 30 days and then it will become habit.  :oP

Okay, on to part 2 of Vegas!  You know, since you’ve been waiting with bated breathe for 3 months and all, I’m thinking I ought not keep you in suspense any longer.  😉

On day 3, I went sightseeing solo.  My sister was in her conference all day, so I checked out our neighboring hotel, The New York-New York, and then took a ride on the LV Monorail.  I took the monorail to help me make my way to The Forum Shops at Caesar’s, but then decided to take the scenic route and walk down the strip back to our hotel, The MGM.  Let’s just say I was not lacking in the physical activity department that day.  😉

I passed the Paris hotel on my walk back to the MGM.  I love all the detail to all the hotels on the strip!

The M&M store was about 1 block from the MGM.  I didn’t stop in, but I’m sure the kids would have loved it if they were with me.  However, since I was kid free, I was pretty much avoiding all kids during my trip.  😉  I thought the huge Ka’ poster was appropriate since it was playing at our hotel and we would be eventually be seeing it while in town.

The Forum Shops at Caesar’s was so pretty inside.  I loved the all the statues!

Inside the mall was a freaking huge H&M…three stories!!

Annnnnd, this would be my ridiculously expensive lunch for the day.  A foot long dog, waffle fries and a tiny water.  Honestly, I wasn’t that hungry at the time, but figured I should eat something.  I only finished about half of my hotdog and 1/3 of my fries.  Definitely could have shared it with someone.

Back at the hotel…I was so happy to see this guy at the end of the day!

On to day 4…there was a huge photography conference (WPPI) coincidentally happening in our exact hotel at the exact time I was in Vegas.  Even though I don’t have a photog business anymore, I thought I’d check out the Expo and see what kind of photography goodies were on display.  Afterwards, I did some more sightseeing and hit up the Bellagio fountains & indoor gardens.  Since we were going to a dinner that night I figured I should go easy on my feet and wear tennies during the day.

The indoor gardens at the Bellagio were gorgeous!  These pictures don’t do it nearly enough justice.  I also got to watch the fountain show out front and I tried recording it, but apparently I don’t know how to use the record function on my point & shoot.  :o/  Note to self…learn your camera!

The Harley shop (and restaurant, I think)

There were plenty of street performers on my walk.  These guys were pretty cool.  When you dropped money in their bucket they would dance!

And these guys were one of the most annoying attractions on my walk.  They were on every flipping corner and there would be 3 or 4 of them!  They were handing out escort/boobie bar cards.  I wish I had gotten a pic of some of the cards.  In case you’re ever in Vegas, don’t take one of their cards unless you want to see some T&A.  😉

That night was a dinner at THEHotel and bar.  The food and atmosphere were awesome, but the bathroom was definitely the highlight of the night.  I know what you’re thinking…dang, she must have really had to potty!  After you see us all spiffy, I’ll explain the bathroom part.

Dun, dun, dun…..THIS is the reason the bathroom was the highlight!  You can use the restroom while overlooking VEGAS!  That’s right folks, floor to ceiling glass wall while you are sitting’ on the pot.  It was freaking awesome!  It was really dark inside, but this gives you an idea of what it looked like.

Seriously, if I go back to Vegas, I will have to hit it up again!

Vegas, Baby, Vegas!!

A month or two ago, I got a call from my sister.  Apparently she had a conference to go to in Las Vegas and she wanted to bring someone to tag along with her, but my BIL couldn’t make it.  Soooo, I was the lucky one that got to go!!  It was my first trip to Vegas and it was awesome!  Other than a trip to the Grand Canyon, I didn’t venture out past the main strip the whole time I was there.  I had fun just walking up and down Las Vegas Blvd and taking it all the sights. One of the things on my “must-do in Vegas” list was that I had to get a picture in front of the “Welcome to Vegas” sign.  It’s a corny, cliche pic…but it was a must!  Soooo, without further ado, I present my obligatory Vegas pic, complete with a showgirl!  😉 Okay, now that we got that out of the way, let’s get on to the rest of my trip!  Everyday I took pictures of all my outfits.  Geez, the fun things I remember to do and actually have time to do when there are no kids or a hubby around. Day 1 – plane ride & Vegas arrival outfit I didn’t get in to Vegas until 8pm.  By the time my sister’s plane arrived from Orlando and we got to our hotel, we were exhausted!

Muhammad Ali was making an appearance at our hotel today for his 70th Birthday celebration.  Coincedentally, my baby boy was doing a report for school on Ali, so I had to try and get a picture.  Unfortunately, when you looked at the ring in the main lobby that normally looked like this….

…looked like THIS after Muhammad Ali arrived!

But, eventually, I pushed my way through and was able to get a few passing shots.  Nothing great, but hey, I got to see Muhammad Ali.  Plus, Evander Holyfield as a bonus!  🙂

Afterwards, we headed to the Venetian hotel.  It was GORGEOUS!  It’s theme is Italy and it was complete with an indoor canal and gondola ride.

This was our view inside the shopping area part of the hotel.  This ceiling looked so real!  It really felt like we were outside, in Italy.  Well, except for all the stores and tourists.  😛

This statue is an actual person.  Took us asking someone why there was money on the ground in front of her and why everyone was just sitting around staring at her for us to figure out that she was alive.  lol.  She was so still!

Annnnd, this was how I ended my night…winning $50 at the slots!  Don’t get too excited.  It was the most I won the whole trip and I lost more than I won.  I know what you’re thinking though, “but did you at least take advantage of your free drink while gambling?”.  And the answer would be, YES!  Every time!  Somehow losing stung a little less knowing that I was sipping on my free drink.  😉

My month in review…and, yes, you are counting correctly…I have 30 pics.  I had a tie for one of the days, so I uploaded both.  🙂

Seriously Good Protein Pancakes (and LiveFit – day 10!)

A week or so ago I tried to make some protein pancakes…you might remember this post, saying the only way to get them down was to smother them in greek yogurt & peanut butter.  Yeah, they were way to egg-y for me.  Not one to be discouraged, I found this recipe and decided to give it a whirl.  I changed it slightly, but I was pleasantly surprised at how they turned out.  They were actually really good and weren’t overly egg-y!

Ingredients:

1 cup old fashioned oats (uncooked, non-instant)

3/4 cup liquid egg whites

1 – 4oz cup fat-free cottage cheese

1/4 tsp vanilla extract

1/4 tsp ground cinnamon

3 packets sugar substitute

Blend all ingredients together in a blender and then cook like you would a regular pancake!  It makes 4 pretty large pancakes or several smaller ones.

See how fluffy they are!

Nutrients (whole recipe) — 475 Calories; 66 Carbs; 6g Fat; 41g Protein; 9g Sugar

I’m not giving up trying other recipes since this one is a little high in carbs, but it is yummy, so it will be a favorite until I find a better one.  😉

LiveFit Update — day 10, legs & calves

Leg day again!  Exercises were the same as last week, but due to an issue with squats, I added an exercise or two to make up for it.  I didn’t go as heavy on my leg presses and was able to complete all three sets of 12 without stopping, but the last reps were tough.  I went to squats next and during my first set, my inner right thigh, close to my pelvic bone, was hurting every time I squatted and it wasn’t a good pain so I decided it was best not to complete the exercise.  I added in the outer thigh machine for 3 sets of 12 and also did 10 min on the stairmill.  I was ticked off that I couldn’t get my squats done this week.  Maybe my body will cooperate next week.  😐
